Carrot Cake

2 cups sugar
3 eggs
1 cup oil
2 ¾ cups flour
2 tsp vanilla
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
½ tsp nutmeg
¼ tsp cloves
1 ½ cups crushed pineapple, drained
1 cup chopped walnuts
2 ½ cups grated carrots

Frosting
1 cup butter
1 lb cream cheese
4 cups powdered sugar

Carrot Cake RecipeGrate carrots in food processor. Change to a chopping blade, measure 2 ½ carrots back into processor and add nuts and pineapple. Chop fine. Set mixture aside. Blend sugar, eggs, oil and vanilla. Add dry ingredients. Mix until just blended, add carrot mixture and blend. Bake in greased and floured 9×13 pan at 350 for one hour.
