Here is an easy recipe submitted by one of our guests Steve Rabin. It is Taco Soup which would be easy to make and is not really soupy. Thank you Steve for this recipe.
TACO SOUP
1 lb. ground beef
1 sm. onion, chopped
1 tsp. salt
1 tsp. pepper
1 (15 oz.) can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can whole kernel corn
2 cans (16 oz.) stewed tomatoes (can be cut into smaller pieces)
1 pkg. taco seasoning
1 pkg. Ranch dressing mix
1-1/2 c. water
Shredded cheddar cheese
Tortilla chips
Brown meat and onion, drain fat.
Add all remaining ingredients except cheese and tortilla chips.
Bring to a boil and simmer 30 minutes.
Top with cheese as you serve with tortilla chips and/or corn bread.
Can also be topped with sour cream.
